Ingredients

2 tablespoons olive oil

1 cup long grain white rice

1 small yellow onion, diced

1 small bell pepper, diced

2 cloves garlic, minced

1 cup tomato sauce

1 can diced tomatoes, 14.5 ounces

2 cups chicken broth

1 cup corn

1 teaspoon chili powder

1 teaspoon ground cumin

1/2 teaspoon paprika

1 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons chopped fresh parsley or cilantro


Instructions

1. Heat the olive oil in a large skillet or saucepan over medium heat.

2. Add the diced onion and bell pepper and cook until softened, about 4 to 5 minutes.

3. Stir in the garlic and cook for 30 seconds.

4. Add the uncooked rice and stir for 2 minutes to lightly toast it.

5. Pour in the tomato sauce, diced tomatoes, and chicken broth.

6. Add the corn, chili powder, cumin, paprika, salt, and black pepper. Stir well.

7. Bring the mixture to a gentle boil.

8. Reduce the heat to low, cover, and simmer for 18 to 22 minutes, or until the rice is tender and the liquid is absorbed.

9. Remove from the heat and let the rice rest for 5 minutes.

10. Fluff with a fork and stir in the chopped parsley or cilantro before serving.

Notes

Do not lift the lid too often while the rice is simmering, or the trapped steam will escape and the rice may cook unevenly.
