Ingredients
12 oz penne or rigatoni pasta
1 lb ground beef
6 slices thick-cut bacon, chopped
2 cups heavy cream
1 cup shredded cheddar cheese
1/2 cup grated Parmesan cheese
1 small onion, diced
2 cloves garlic, minced
Salt and black pepper to taste
1 tbsp olive oil (if needed)
Optional: red pepper flakes, chopped parsley for garnish
Instructions
- Bring a large pot of salted water to a boil. Cook pasta according to package instructions. Drain and set aside, reserving 1/2 cup of pasta water.
- In a large skillet, cook chopped bacon over medium heat until crispy. Remove and set aside, reserving 2 tablespoons of bacon grease.
- In the same skillet, add ground beef and diced onions. Cook until beef is browned and onions are soft, about 6-8 minutes. Add garlic and cook for another 30 seconds. Drain excess fat if needed.
- Lower the heat and pour in heavy cream. Stir in cheddar and Parmesan until smooth and creamy. Add a splash of pasta water if needed to loosen the sauce.
- Toss cooked pasta into the sauce and mix until evenly coated. Adjust seasoning with salt and pepper.
- Top with crispy bacon and garnish with red pepper flakes or parsley if desired.
