Ingredients

12 oz penne or rigatoni pasta

1 lb ground beef

6 slices thick-cut bacon, chopped

2 cups heavy cream

1 cup shredded cheddar cheese

1/2 cup grated Parmesan cheese

1 small onion, diced

2 cloves garlic, minced

Salt and black pepper to taste

1 tbsp olive oil (if needed)

Optional: red pepper flakes, chopped parsley for garnish


Instructions

  1. Bring a large pot of salted water to a boil. Cook pasta according to package instructions. Drain and set aside, reserving 1/2 cup of pasta water.
  2. In a large skillet, cook chopped bacon over medium heat until crispy. Remove and set aside, reserving 2 tablespoons of bacon grease.
  3. In the same skillet, add ground beef and diced onions. Cook until beef is browned and onions are soft, about 6-8 minutes. Add garlic and cook for another 30 seconds. Drain excess fat if needed.
  4. Lower the heat and pour in heavy cream. Stir in cheddar and Parmesan until smooth and creamy. Add a splash of pasta water if needed to loosen the sauce.
  5. Toss cooked pasta into the sauce and mix until evenly coated. Adjust seasoning with salt and pepper.
  6. Top with crispy bacon and garnish with red pepper flakes or parsley if desired.
  7. Serve hot and enjoy!
