Ingredients

4 large russet potatoes

6 tablespoons butter

1 cup sour cream

1/2 cup milk

2 cups shredded sharp cheddar cheese

8 slices bacon, cooked and crumbled

3 green onions, sliced

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon garlic powder


Instructions

1. Preheat the oven to 400°F and grease a 9×9-inch baking dish.

2. Bake the russet potatoes directly on the oven rack for 50 to 60 minutes, or until fork tender.

3. Let the potatoes cool slightly, then peel or scoop out the insides into a large mixing bowl.

4. Add the butter, sour cream, milk, salt, black pepper, and garlic powder to the potatoes.

5. Mash until mostly smooth and creamy.

6. Stir in 1 1/2 cups shredded cheddar cheese, most of the crumbled bacon, and most of the sliced green onions.

7. Spread the potato mixture evenly into the prepared baking dish.

8. Top with the remaining 1/2 cup cheddar cheese and the rest of the bacon.

9. Bake for 20 to 25 minutes, until hot and bubbly and the cheese is melted.

10. Sprinkle with the remaining green onions before serving.

Notes

Do not overmix the potatoes after adding the dairy, or the casserole can turn gluey instead of light and fluffy.
