Ingredients

450g boneless skinless chicken breast or thighs

80ml maple syrup

4 cloves garlic, minced

2 tablespoons olive oil

200ml heavy cream

2 tablespoons butter

100g freshly grated Parmesan cheese

1 tablespoon Cajun seasoning

225g penne or fettuccine pasta

200g Brussels sprouts, thinly sliced

Salt and pepper, to taste


Instructions

1. Preheat oven to 425°F. Slice Brussels sprouts thinly and toss with olive oil, salt, and pepper. Spread on a baking sheet and roast for 18-22 minutes until crispy, shaking halfway.

2. In a skillet, heat olive oil over medium-high. Add chicken pieces, season with salt and pepper, and sear until golden brown and fully cooked. Remove and set aside.

3. In the same skillet, add minced garlic and sauté for 30 seconds. Pour in maple syrup, stir, then return chicken to coat in glaze. Remove from heat.

4. In a saucepan, melt butter and sauté remaining garlic. Add heavy cream and bring to a simmer. Stir in Cajun seasoning and Parmesan, whisking until smooth and creamy.

5. Boil pasta per package directions, drain, then toss with the Cajun Alfredo sauce.

6. To serve, layer Alfredo pasta in bowls, top with maple garlic chicken bites, and finish with crispy Brussels. Garnish with Parmesan or Cajun spice if desired.

Notes

For crispier Brussels sprouts, spread them out evenly and don’t overcrowd the baking sheet.
