Description

Ingredients

1 1/2 pounds chicken breast or chicken thighs, cut into chunks

3/4 cup Greek yogurt

2 tablespoons olive oil

2 tablespoons lemon juice

3 cloves garlic, minced

1 teaspoon paprika

1 teaspoon dried oregano

1/2 teaspoon ground cumin

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons fresh parsley, chopped

lemon wedges for serving

tzatziki sauce for serving


Instructions

1. In a large bowl, whisk together the Greek yogurt, olive oil, lemon juice, garlic, paprika, oregano, cumin, salt, and black pepper until smooth.

2. Add the chicken pieces to the marinade and toss until fully coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for deeper flavor.

3. Thread the marinated chicken onto skewers, leaving a little space between the pieces for even cooking.

4. Preheat a grill or grill pan over medium-high heat. Cook the skewers for 10 to 12 minutes, turning every few minutes, until the chicken is fully cooked and lightly charred on the edges.

5. Remove from the heat and let the skewers rest for 2 minutes.

6. Sprinkle with chopped parsley and serve with lemon wedges and tzatziki sauce.

Notes

Do not overcrowd the chicken pieces on the skewers, or they may steam instead of getting those delicious golden, lightly charred edges.
