Description

These Mediterranean Chicken Tenders are the kind of easy recipe that instantly makes dinner feel fresh, bright, and satisfying. Juicy chicken is coated in olive oil, lemon juice, garlic, herbs, and Parmesan, then cooked until golden and flavorful with crisp edges and a tender center. It is a perfect quick breakfast protein prep, easy dinner, healthy snack, lunch idea, and one of those food ideas you can serve with salad, rice, roasted vegetables, or warm pita for a simple family meal.

Ingredients

1 lb chicken tenders

2 tbsp olive oil

2 tbsp lemon juice

3 cloves garlic, minced

1 tsp dried oregano

1 tsp paprika

1 tsp salt

1/2 tsp black pepper

1/4 cup grated Parmesan cheese

2 tbsp fresh parsley, chopped

1 tbsp olive oil for cooking

1 lemon, cut into wedges

Instructions

1. In a medium bowl, whisk together 2 tablespoons olive oil, lemon juice, garlic, oregano, paprika, salt, black pepper, and Parmesan cheese.

2. Add the chicken tenders and toss until each piece is evenly coated. Let the chicken marinate for 15 to 20 minutes.

3. Heat 1 tablespoon olive oil in a large skillet over medium heat.

4. Arrange the chicken tenders in a single layer in the hot skillet.

5. Cook for 3 to 4 minutes on the first side until golden brown.

6. Flip and cook for another 3 to 4 minutes, or until the chicken is cooked through and reaches 165°F internally.

7. Transfer the chicken to a serving plate and sprinkle with fresh parsley.

8. Serve immediately with lemon wedges on the side.

Notes

Do not overcrowd the skillet, or the chicken will steam instead of developing that flavorful golden crust.
