Ingredients
1 lb ground beef
1/2 cup diced onion
2 cloves garlic, minced
2 tbsp taco seasoning
1 tbsp tomato paste
1/4 cup water
1 cup shredded Monterey Jack cheese
1 cup shredded cheddar cheese
4 hoagie rolls
2 tbsp butter
1 cup pico de gallo
1/4 cup pickled jalapenos
1/4 cup chopped fresh cilantro
1 lime, cut into wedges
Instructions
1. Slice the hoagie rolls and prep the pico de gallo, jalapenos, cilantro, and lime.
2. Heat a large skillet over medium-high heat and cook the ground beef with the diced onion until the beef is browned and the onion is softened.
3. Stir in the garlic, taco seasoning, tomato paste, and water, then cook for 2 to 3 minutes until the mixture is juicy and well combined.
4. Lower the heat and sprinkle in the Monterey Jack and cheddar cheese.
5. Chop and fold the cheese into the beef mixture with a spatula until melted and evenly mixed.
6. Butter the inside of the hoagie rolls and toast them in a skillet until lightly golden.
7. Fill each roll with the chopped beef and cheese mixture.
8. Top with pico de gallo, pickled jalapenos, chopped cilantro, and a squeeze of lime.
9. Serve immediately while hot and melty.
Notes
Do not overcook the beef after adding the seasoning and cheese, or the filling can turn dry instead of juicy and melty.
