1 1/2 cups oat cookie crumbs

1/4 cup light brown sugar

6 tablespoons unsalted butter, melted

3/4 cup granulated sugar

1/2 cup light brown sugar

2 tablespoons milk powder

1 tablespoon cornstarch

1/4 teaspoon salt

1/2 cup unsalted butter, melted

1/3 cup heavy cream

1 teaspoon vanilla extract

4 large egg yolks

powdered sugar, for dusting


Instructions

1. Preheat the oven to 350°F and lightly grease a 9-inch pie dish.

2. In a bowl, combine the oat cookie crumbs, 1/4 cup light brown sugar, and 6 tablespoons melted butter until evenly moistened.

3. Press the crust mixture firmly into the bottom and up the sides of the pie dish.

4. Bake the crust for 10 minutes, then let it cool slightly.

5. In a large bowl, whisk together the granulated sugar, 1/2 cup light brown sugar, milk powder, cornstarch, and salt.

6. Add 1/2 cup melted butter, heavy cream, vanilla extract, and egg yolks. Whisk just until smooth.

7. Pour the filling into the prepared crust.

8. Bake for 30 to 35 minutes, until the edges are set and the center still has a slight jiggle.

9. Cool the pie completely at room temperature.

10. Refrigerate for at least 3 hours, or until fully chilled and set.

11. Dust with powdered sugar before slicing and serving.

Notes

Do not overbake the pie or the filling will lose its signature gooey texture. Pull it from the oven when the center still has a gentle wobble.
