Description

No-Fry Crispy Baked Chicken Tacos are the kind of quick dinner that instantly makes an ordinary night feel more fun. These golden oven baked tacos are filled with seasoned shredded chicken, melty cheese, and bold taco flavor, then baked until the shells turn crisp without any messy frying. They are perfect for easy dinner nights, family meals, game day snacks, and casual food ideas when you want something crunchy, cheesy, and satisfying with very little cleanup.


Ingredients

2 cups shredded cooked chicken

1 cup taco sauce or enchilada sauce

8 corn tortillas

1 1/2 cups shredded Mexican blend cheese

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon ground cumin

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup shredded lettuce

2 tablespoons chopped cilantro

1/4 cup sour cream optional

1/4 cup salsa optional

1 jalapeño sliced optional

1 avocado sliced optional


Instructions

1. Preheat the oven to 425°F and lightly grease a large baking sheet with olive oil or cooking spray.

2. In a mixing bowl, stir together the shredded chicken, taco sauce, chili powder, cumin, garlic powder, onion powder, salt, and black pepper until evenly coated.

3. Warm the corn tortillas in the microwave wrapped in a damp paper towel for 20 to 30 seconds so they fold easily without cracking.

4. Place a little shredded cheese on one half of each tortilla, add some of the chicken mixture, then top with a little more cheese.

5. Fold each tortilla over into a taco shape and place it seam side down on the prepared baking sheet.

6. Lightly brush or spray the tops of the tacos with oil for a crisp golden finish.

7. Bake for 14 to 18 minutes, or until the tortillas are crisp and the edges are browned.

8. Remove from the oven and let the tacos rest for 2 minutes.

9. Top with shredded lettuce, chopped cilantro, and any optional toppings before serving.

Notes

Do not overfill the tortillas, or they can split open and steam instead of crisping in the oven.
