Ingredients
1 pound boneless skinless chicken breasts
1 cup long grain white rice
1 can (10.5 oz) cream of mushroom soup
1 can (10.5 oz) cream of chicken soup
1 1/2 cups water or chicken broth
1 packet onion soup mix
Instructions
1. Preheat oven to 350°F and grease a 9×13 baking dish.
2. In a large bowl, combine cream of mushroom soup, cream of chicken soup, water or broth, and uncooked rice. Stir to mix well.
3. Pour the mixture evenly into the prepared baking dish.
4. Place chicken breasts on top of the rice mixture, gently pressing them in.
5. Sprinkle the dry onion soup mix evenly over everything.
6. Cover the dish tightly with foil—no peeking!
7. Bake for 1 hour and 30 minutes.
8. Let rest for 5 minutes before serving.
Notes
Always use long grain white rice—not instant or brown—for best results.
Letting the casserole rest after baking ensures the rice absorbs all remaining liquid.
