Ingredients
1 lb ground beef
1 small onion, diced
1 small red bell pepper, diced
1 small green bell pepper, diced
1 packet taco seasoning
1/3 cup water
1 can refrigerated biscuit dough, 16.3 oz
1 can diced tomatoes with green chiles, 10 oz, drained
1 cup sour cream
1/2 cup mayonnaise
1 1/2 cups shredded sharp cheddar cheese
1 cup shredded Monterey Jack cheese
2 tbsp chopped fresh parsley
Instructions
1. Preheat the oven to 350°F and lightly grease a 9×13-inch baking dish or oven-safe pan.
2. Press the biscuit dough evenly into the bottom of the dish, pinching the seams together to form a solid crust. Bake for 12 minutes until just set.
3. While the crust bakes, cook the ground beef, onion, red bell pepper, and green bell pepper in a large skillet over medium heat until the beef is browned and the vegetables are softened. Drain excess grease.
4. Stir in the taco seasoning and water, then add the drained diced tomatoes with green chiles. Simmer for 3 to 4 minutes until slightly thickened.
5. In a medium bowl, mix the sour cream, mayonnaise, 1 cup of the cheddar cheese, and 1/2 cup of the Monterey Jack cheese until smooth.
6. Spread the beef mixture evenly over the baked biscuit crust.
7. Spoon and spread the sour cream mixture over the beef layer.
8. Sprinkle the remaining cheddar cheese and Monterey Jack cheese evenly over the top.
