Ingredients
2 large boneless skinless chicken breasts
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon paprika
2 tablespoons olive oil
2 tablespoons butter
4 cloves garlic, minced
3/4 cup chicken broth
2 tablespoons Dijon mustard
3 tablespoons fresh lemon juice
1/3 cup heavy cream
6 lemon slices
2 tablespoons chopped fresh parsley
Instructions
1. Slice the chicken breasts in half lengthwise to make 4 thinner cutlets, then season both sides with salt, black pepper, garlic powder, and paprika.
2. Heat olive oil in a large skillet over medium high heat and sear the chicken for 4 to 5 minutes per side until golden. Transfer to a plate.
3. Lower the heat to medium and add the butter to the same skillet. Stir in the minced garlic and cook for 30 seconds until fragrant.
4. Pour in the chicken broth and scrape up the browned bits from the bottom of the pan.
5. Whisk in the Dijon mustard, fresh lemon juice, and heavy cream until the sauce is smooth.
6. Add the lemon slices, then return the chicken to the skillet and spoon some sauce over the top.
