Ingredients
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
3/4 cup milk
2 large eggs
1 teaspoon almond extract
1 teaspoon vanilla extract
3/4 cup maraschino cherries, drained, dried, and chopped
1 tablespoon maraschino cherry juice
1 cup powdered sugar
2 tablespoons milk
1/4 teaspoon almond extract
1 teaspoon maraschino cherry juice
Instructions
1. Preheat the oven to 350°F and grease a 9×5-inch loaf pan. Line it with parchment paper for easier removal if desired.
2. In a medium bowl, whisk together the flour, baking powder, and salt.
3. In a large bowl, beat the softened butter and granulated sugar until light and fluffy.
4. Add the eggs one at a time, mixing well after each addition.
5. Stir in the milk, almond extract, vanilla extract, and 1 tablespoon maraschino cherry juice.
6. Add the dry ingredients to the wet ingredients and mix just until combined.
7. Fold in the chopped maraschino cherries gently.
8. Spread the batter evenly into the prepared loaf pan.
9. Bake for 45 to 55 minutes, or until a toothpick inserted in the center comes out clean.
10. Cool in the pan for 10 minutes, then transfer the bread to a wire rack to cool completely.
11. In a small bowl, whisk together the powdered sugar, 2 tablespoons milk, 1/4 teaspoon almond extract, and 1 teaspoon maraschino cherry juice until smooth.
12. Drizzle the glaze over the cooled bread, let it set, then slice and serve.
Notes
Do not add wet cherries straight from the jar, or the loaf can turn gummy and streaky. Pat them dry well before folding them into the batter.
