Ingredients
1 cup unsalted butter, softened
1 cup brown sugar
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups old-fashioned oats
2 cups crispy rice cereal
1 cup sweetened shredded coconut
1 1/2 cups semisweet chocolate chips
Instructions
1. Preheat the oven to 350°F and line baking sheets with parchment paper.
2. In a large mixing bowl, cream the softened butter, brown sugar, and granulated sugar until light and fluffy.
3. Beat in the eggs one at a time, then mix in the vanilla extract.
4. In a separate bowl, whisk together the flour, baking soda, and salt.
5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
6. Fold in the oats, crispy rice cereal, shredded coconut, and chocolate chips until evenly distributed.
7. Scoop rounded portions of dough onto the prepared baking sheets, spacing them about 2 inches apart.
8. Bake for 10 to 12 minutes, or until the edges are lightly golden and the centers are just set.
9. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
Do not overbake the cookies. Pull them from the oven when the centers still look slightly soft, because they will continue setting as they cool and stay chewy instead of turning dry.
