Ingredients

1 tablespoon lemon zest

2 cups raspberries

1/4 cup granulated sugar

1 tablespoon cornstarch

1 cup powdered sugar

2 tablespoons lemon juice


Instructions

1. Preheat the oven to 350°F and line an 8×8-inch baking pan with parchment paper or grease it lightly.

2. In a large bowl, cream the butter and 1 cup granulated sugar until light and fluffy.

3. Beat in the eggs one at a time, then mix in the milk, 2 tablespoons lemon juice, and lemon zest.

4. Add the flour, baking powder, and salt, and stir just until a smooth batter forms.

5. Spread the batter evenly into the prepared pan.

6. In a small saucepan, combine the raspberries, 1/4 cup granulated sugar, and cornstarch over medium heat.

7. Cook the raspberry mixture, stirring gently, until it thickens and the berries break down.

8. Spoon the raspberry topping over the batter and spread it gently across the surface.

9. Bake for 30 to 35 minutes, or until the center is set and the edges are lightly golden.

10. Cool the bars completely in the pan.

11. Whisk the powdered sugar with 2 tablespoons lemon juice until smooth.

12. Drizzle the glaze over the cooled bars, then slice and serve.

Notes

Do not glaze the bars while they are still warm, or the drizzle will melt into the top instead of sitting neatly on the surface.
