Ingredients

425g pumpkin puree

150g brown sugar

350ml evaporated milk

2 large eggs

1 tbsp pumpkin pie spice

1 tsp vanilla extract

1/4 tsp salt

100g all-purpose flour

100g old-fashioned oats

100g brown sugar (for topping)

115g melted butter

Pinch of salt (for topping)


Instructions

1. Preheat your oven to 350°F (175°C).

2. In a large bowl, mix pumpkin puree, brown sugar, evaporated milk, eggs, pumpkin pie spice, vanilla, and salt until smooth.

3. Pour the mixture into a greased 9×13-inch baking dish and smooth the top.

4. In another bowl, mix flour, oats, brown sugar, and salt. Stir in the melted butter until crumbles form.

5. Sprinkle the topping over the pumpkin mixture evenly.

6. Bake uncovered for 45–50 minutes until golden and set.

7. Let it cool for 15 minutes before serving warm or cold.

Notes

Make sure to use pure pumpkin puree, not pumpkin pie filling.

For a crunchier topping, add 1/4 cup chopped pecans to the crumble mixture.
