Ingredients

2 large boneless skinless chicken breasts

1 cup ricotta cheese

1 1/2 cups shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 large egg

2 cloves garlic minced

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/4 teaspoon black pepper

2 cups marinara sauce

1 tablespoon olive oil

2 tablespoons chopped fresh basil or parsley


Instructions

1. Preheat the oven to 375°F and lightly grease a baking dish with the olive oil.

2. Pat the chicken breasts dry and season both sides with the salt and black pepper. If they are very thick, pound them lightly for even cooking.

3. In a medium bowl, mix the ricotta cheese, egg, Parmesan cheese, garlic, and Italian seasoning until smooth.

4. Spread 1/2 cup of marinara sauce across the bottom of the baking dish.

5. Place the chicken breasts in the dish in a single layer.

6. Spoon the ricotta mixture evenly over each chicken breast and spread it gently.

7. Pour the remaining marinara sauce over the top.

8. Sprinkle the mozzarella cheese evenly over everything.

9. Bake for 30 to 35 minutes, or until the chicken reaches 165°F internally and the cheese is melted and golden in spots.

10. Let it rest for 5 minutes, then garnish with chopped basil or parsley before serving.

Notes

Do not skip pounding or evening out thick chicken breasts, because uneven pieces can leave you with overcooked edges and an undercooked center.
