Ingredients
24 Ritz crackers
4 oz cream cheese, softened
3/4 cup marshmallow creme
1 cup powdered sugar
1 1/2 cups semi-sweet chocolate chips
1 tbsp coconut oil
2 tbsp crushed peppermint candies
2 tbsp red, green, and white sprinkles
Instructions
1. In a medium bowl, beat the softened cream cheese until smooth.
2. Add the marshmallow creme and powdered sugar, then mix until fluffy and well combined.
3. Spread or pipe the filling onto 12 Ritz crackers.
4. Top with the remaining 12 crackers to make sandwich cookies.
5. Place the cookies on a parchment-lined tray and chill for 15 to 20 minutes.
6. In a microwave-safe bowl, melt the chocolate chips with the coconut oil in short intervals, stirring until smooth.
7. Spoon melted chocolate over the top of each sandwich cookie.
8. Immediately sprinkle with crushed peppermint candies and holiday sprinkles.
9. Chill again until the chocolate is fully set, then serve or store in the refrigerator.
Notes
Do not overfill the crackers, or the filling may squeeze out too much when you press the tops on.
