Ingredients
1 large egg white
1 tablespoon vanilla extract
1 tablespoon unsalted butter, melted
4 cups mixed nuts
1/2 cup granulated sugar
1/4 cup brown sugar
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/2 teaspoon salt
Instructions
1. Preheat the oven to 300°F and line a large baking sheet or roasting pan with parchment paper.
2. In a large mixing bowl, whisk the egg white until foamy.
3. Stir in the vanilla extract and melted butter.
4. In a separate bowl, combine the granulated sugar, brown sugar, cinnamon, nutmeg, cloves, and salt.
5. Add the mixed nuts to the egg white mixture and toss until evenly coated.
6. Sprinkle the sugar-spice mixture over the nuts and stir well so every nut is coated.
7. Spread the nuts in a single layer on the prepared baking sheet.
8. Roast for 25 to 30 minutes, stirring once or twice during baking.
9. Remove from the oven and let the nuts cool completely before serving or storing.
Notes
Do not skip cooling the nuts completely before storing them, because trapping warmth in the container can make the coating soft instead of crisp.
