1 1/2 lb Yukon Gold potatoes, peeled and diced

1 cup heavy cream

1 tsp fresh thyme leaves

1 tsp salt

1/2 tsp black pepper

2 tbsp fresh parsley, chopped


Instructions

1. Melt the butter in a large pot over medium heat. Add the onion and celery, then cook for 5 minutes until softened.

2. Stir in the garlic and cook for 30 seconds until fragrant.
