Ingredients

2 3/4 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1 cup unsalted butter, softened

1 1/2 cups granulated sugar

1 large egg

2 teaspoons vanilla extract

1/4 cup granulated sugar for rolling


Instructions

1. Preheat your oven to 350°F and line two baking sheets with parchment paper.

2. In a medium bowl, whisk together the flour, baking soda, baking powder, and salt.

3. In a large mixing bowl, beat the softened butter and 1 1/2 cups granulated sugar until light and fluffy.

4. Mix in the egg and vanilla extract until smooth.

5. Gradually add the dry ingredients to the wet ingredients and mix just until a soft dough forms.

6. Scoop the dough into tablespoon-sized portions and roll each portion into a ball.

7. Roll each dough ball in the remaining 1/4 cup granulated sugar.

8. Place the dough balls on the prepared baking sheets, spacing them about 2 inches apart.

9. Bake for 8 to 10 minutes, until the edges are set and the centers still look soft.

10. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Avoid overbaking the cookies, because they continue to set as they cool and that is what keeps the centers soft and chewy.
