Description

Ingredients

3 cups cooked shredded chicken

3 cups cooked rice

1 tablespoon olive oil

1 small onion, diced

1 red bell pepper, diced

1 green bell pepper, diced

3 cloves garlic, minced

1 packet taco seasoning

1 can diced tomatoes with green chilies, 10 ounces

1 cup sour cream

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1/2 cup sliced black olives

2 tablespoons chopped fresh cilantro


Instructions

1. Preheat the oven to 375°F and lightly grease a 9×13-inch baking dish.

2. Heat olive oil in a skillet over medium heat, then cook the onion, red bell pepper, and green bell pepper until softened.

3. Stir in the garlic and cook for 30 seconds until fragrant.

4. In a large bowl, combine the shredded chicken, cooked rice, taco seasoning, diced tomatoes with green chilies, sour cream, cooked vegetables, half the cheddar cheese, half the Monterey Jack cheese, and half the olives.

5. Mix until everything is evenly combined.

6. Spread the mixture into the prepared baking dish.

7. Top with the remaining cheddar cheese, Monterey Jack cheese, and black olives.

8. Bake uncovered for 20 to 25 minutes until hot and bubbly.

9. Rest for 5 minutes, then top with chopped cilantro and serve.

Notes

Do not skip the rest time after baking, because cutting into the casserole too soon can make it fall apart and turn watery.
