Ingredients
1 cup uncooked white rice
2 cups water
1 pound ground beef
1 tablespoon sesame oil
1 small yellow onion, diced
1 red bell pepper, diced
1 yellow bell pepper, diced
3 cloves garlic, minced
1 teaspoon fresh ginger, grated
1/4 cup soy sauce
2 tablespoons brown sugar
1 tablespoon cornstarch
1/3 cup beef broth
1/4 teaspoon black pepper
2 green onions, sliced
1 teaspoon sesame seeds
Instructions
1. Cook the rice with the water according to package directions, then fluff and keep warm.
2. Heat a large skillet over medium-high heat and cook the ground beef until browned, breaking it into crumbles as it cooks. Drain excess grease if needed.
3. Add the sesame oil, diced onion, red bell pepper, and yellow bell pepper to the skillet. Cook for 4 to 5 minutes until the vegetables begin to soften.
4. Stir in the garlic and fresh ginger and cook for 30 seconds until fragrant.
5. In a small bowl, whisk together the soy sauce, brown sugar, cornstarch, beef broth, and black pepper until smooth.
6. Pour the sauce into the skillet and stir well to coat the beef and vegetables.
7. Simmer for 2 to 3 minutes until the sauce thickens and turns glossy.
8. Spoon the warm rice into bowls and top with the beef mixture.
9. Finish with sliced green onions and sesame seeds before serving.
Notes
Do not rush the simmering step after adding the sauce, or the mixture may taste thin instead of rich and glossy.
