Ingredients
2 1/2 pounds Russet potatoes
6 tablespoons unsalted butter
3/4 cup whole milk, warmed
1/2 cup sour cream
1 1/2 teaspoons salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1 tablespoon chopped fresh parsley, optional
1 extra tablespoon butter for topping, optional
Instructions
1. Peel the potatoes and cut them into evenly sized chunks.
2. Place the potatoes in a large pot and cover with cold water. Add a generous pinch of salt.
3. Bring to a boil and cook for 15 to 20 minutes, or until the potatoes are very fork tender.
4. Drain the potatoes well, then return them to the warm pot for 1 to 2 minutes so excess moisture can evaporate.
5. In a small saucepan or microwave-safe bowl, warm the butter and milk together.
6. Mash the potatoes until mostly smooth.
7. Add the warm butter and milk mixture, sour cream, salt, black pepper, and garlic powder.
8. Mash and stir gently until creamy and smooth. Do not overmix.
9. Taste and adjust seasoning if needed.
10. Transfer to a serving bowl, top with extra butter and parsley if desired, and serve hot.
Notes
Do not overmix the potatoes after adding the liquid, because too much mixing can make mashed potatoes thick and gluey instead of light and fluffy.
