Ingredients
1 1/2 cups whole milk
1/2 cup heavy cream
1/2 cup granulated sugar
1/4 cup unsweetened cocoa powder
2 tablespoons cornstarch
1 teaspoon vanilla extract
1/8 teaspoon salt
Instructions
1. In a medium saucepan, whisk together the granulated sugar, unsweetened cocoa powder, cornstarch, and salt until well combined.
2. Slowly pour in the whole milk and heavy cream while whisking constantly to create a smooth chocolate mixture.
3. Place the saucepan over medium heat and cook, whisking often, until the mixture thickens slightly and becomes glossy.
4. Remove the pan from the heat and stir in the vanilla extract.
5. Let the mixture cool for 15 to 20 minutes.
6. Pour the mixture into popsicle molds, leaving a little room at the top.
7. Insert popsicle sticks and freeze for at least 6 hours or until fully firm.
8. To unmold, run warm water over the outside of the molds for a few seconds and gently pull the fudgesicles out.
Notes
Do not let the chocolate base boil aggressively, because overheating can make the mixture grainy and affect the smooth creamy texture.
