  • 450 g chicken thighs or breasts
  • 225 g Andouille sausage
  • 1.5 cups long-grain rice
  • 1 cup bell peppers (red and green), diced
  • 0.5 cup celery, diced
  • 1 cup onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons Cajun seasoning
  • 3 cups chicken broth
  • 400 g diced tomatoes
  • 0.25 cup green onions, chopped
  • 2 tablespoons parsley, chopped

Instructions
 

  • Sear the meats: Heat oil in a Dutch oven. Brown the sausage slices until caramelized; remove. Sear the chicken until golden on all sides.
  • Cook the vegetables: Add onion, celery, and bell peppers to the pot. Cook until softened, then stir in garlic.
  • Season and combine: Add Cajun seasoning, sausage, tomatoes, and chicken broth. Stir well.
  • Add rice and simmer: Stir in rice, cover, and simmer for 25–30 minutes until rice absorbs all liquid.
  • Garnish and serve: Fluff with a fork and top with green onions and parsley.

Notes

Best served hot. Can be stored up to 4 days refrigerated or frozen for 3 months.
