  • 1 tablespoon olive oil
  • 1 medium yellow onion diced
  • 2 cloves garlic minced
  • 1 pound cooked shredded chicken rotisserie or poached
  • 1 can (4 oz) diced green chilies
  • 1 can (15 oz) white beans drained and rinsed
  • 1 can (15 oz) fire-roasted diced tomatoes
  • 1 cup chicken broth
  • 1 teaspoon Cajun seasoning adjust to taste
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper optional
  • 1/2 cup sour cream
  • 4 oz cream cheese softened
  • 1/2 cup shredded cheddar cheese
  • Fresh cilantro, lime wedges, and sliced jalapeños for garnish

Instructions
 

  • In a large pot, heat olive oil over medium heat. Add onion and cook 3–5 minutes. Stir in garlic and cook 1 more minute.
  • Add chicken, green chilies, beans, tomatoes, and broth. Season with Cajun spice, paprika, cumin, salt, pepper, and cayenne.
  • Bring to a simmer. Cook uncovered for 15 minutes to blend flavors and slightly reduce.
  • Stir in sour cream, cream cheese, and cheddar. Simmer on low until melted and creamy. Do not boil.
  • Serve hot, garnished with cilantro, jalapeños, and lime.

Notes

Warm the cream cheese for easy melting. Adjust spice to taste. Great with cornbread or tortilla strips.
