  • 3 chicken breasts or thighs
  • 2 cups white beans (cannellini or great northern)
  • 3 tablespoons Cajun seasoning
  • 4 cups chicken broth
  • 4 ounces cream cheese or 1/2 cup heavy cream
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 jalapeños, sliced
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 2 tablespoons lime juice
  • 1/4 cup fresh cilantro, chopped

Instructions
 

  • Sauté onion and garlic in olive oil until soft and fragrant.
  • Add chicken, Cajun seasoning, paprika, and cumin. Stir to coat.
  • Pour in chicken broth, bring to boil, then simmer for 20–25 minutes.
  • Shred chicken, return to pot, stir in cream cheese or heavy cream.
  • Add beans and jalapeños, cook for 10 minutes.
  • Finish with lime juice and fresh cilantro.
