  • 4 bone-in, skin-on chicken thighs
  • 1 cup long-grain rice
  • 1 cup chicken stock
  • 1/2 cup coconut milk
  • 1/2 cup green peas
  • 1/2 cup bell peppers, chopped
  • 1/2 cup onions, chopped
  • 1/4 cup tomatoes, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon allspice
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cumin
  • 1/2 teaspoon dried thyme
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons fresh cilantro, chopped
  • 1 tablespoon lime juice

Instructions
 

  • Coat chicken with spices and sear until golden, about 5 minutes per side.
  • Sauté onions, garlic, and peppers until fragrant.
  • Add rice with turmeric, cumin, and thyme; toast for 1–2 minutes.
  • Return chicken, add stock, coconut milk, peas, and tomatoes; simmer 20–25 minutes.
  • Finish with cilantro and lime juice before serving.

Notes

Adjust spices to your heat preference. Add more coconut milk for extra creaminess if desired.
