Ingredients
  

  • 2 large chicken breasts
  • 1 cup roasted chestnuts
  • 4 cloves garlic
  • 1.5 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cups baby potatoes
  • 1 tbsp fresh chopped sage
  • 1 cup mushrooms, sliced

  • 1 pinch chili flakes (optional)

Instructions
 

  • Sear the chicken with salt and pepper until golden and cooked through, then set aside.
  • Roast baby potatoes with garlic, olive oil, and chopped sage at 400°F for 25–30 minutes.
  • Sauté mushrooms in olive oil and toss with fresh basil pesto.
  • Blend roasted chestnuts with cream and garlic; simmer with Parmesan until thick and creamy.
  • Slice chicken, plate with potatoes, spoon over Alfredo sauce, and top with mushroom basil pesto.

Notes

Strain the blended chestnut cream for extra smoothness. Add a splash of milk or cream when reheating leftovers.
