Ingredients
  

  • 4 chicken breasts
  • 8 tablespoons unsalted butter
  • 4 cloves garlic minced
  • 2 tablespoons fresh parsley chopped
  • 1 tablespoon fresh dill chopped
  • 1 teaspoon salt
  • 1 teaspoon lemon juice
  • 1 cup all-purpose flour
  • 2 eggs beaten
  • 1.5 cups panko breadcrumbs
  • 0.25 cup vegetable oil for frying

Instructions
 

  • Mash butter with garlic, parsley, dill, salt, and lemon juice. Shape into a small log, wrap in cling film, and freeze until firm.
  • Butterfly and pound chicken breasts thin for even cooking.
  • Place frozen butter log in chicken, fold sides, roll tightly, and secure with toothpicks.
  • Coat in flour, dip in beaten eggs, and cover with panko breadcrumbs. Repeat for extra crunch.
  • Pan-fry until golden brown, then bake at 375°F for 15 minutes until fully cooked.
