  • 6 cups potatoes, peeled and cubed
  • 2 cups shredded cheddar cheese
  • 10.5 oz cream of chicken soup
  • 1 cup sour cream
  • 0.5 cup melted butter
  • 0.5 cup chopped onion (optional)
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp paprika or 2 tablespoons fresh parsley for garnish

Instructions
 

  • Peel and cube the potatoes into small pieces for even cooking.
  • In a mixing bowl, combine cream of chicken soup, sour cream, melted butter, and half of the shredded cheddar cheese. Mix until smooth.
  • Grease the crockpot, add the potatoes, and pour the cheese mixture over them. Stir well to coat.
  • Cook on low for 4–5 hours or on high for 2–3 hours until the potatoes are tender.
  • Sprinkle the remaining cheese over the top during the last 15 minutes of cooking.
  • Top with paprika or fresh parsley and serve hot.

Notes

For extra flavor, add crumbled bacon or diced ham before cooking.
