Instructions
In a skillet over medium heat, cook bacon until crispy (6–8 minutes). Drain on a paper towel.
Mash avocado with a pinch of salt and pepper in a small bowl. Set aside.
Melt butter in a skillet and cook eggs to your preference (scrambled or fried). Season to taste.
Toast croissant halves cut-side down in a skillet until golden.
Spread mashed avocado on bottom halves, add bacon, eggs, cheese or hot sauce, and top halves.
Notes
Best enjoyed fresh, but you can prep components ahead for quick assembly.
