  • 2 large croissants, halved
  • 4 slices thick-cut bacon
  • 2 large eggs
  • 1 tablespoon butter
  • 1/2 ripe avocado
  • Salt and pepper to taste
  • Optional: hot sauce or cheese slices

Instructions
 

  • In a skillet over medium heat, cook bacon until crispy (6–8 minutes). Drain on a paper towel.
  • Mash avocado with a pinch of salt and pepper in a small bowl. Set aside.
  • Melt butter in a skillet and cook eggs to your preference (scrambled or fried). Season to taste.
  • Toast croissant halves cut-side down in a skillet until golden.
  • Spread mashed avocado on bottom halves, add bacon, eggs, cheese or hot sauce, and top halves.

Notes

Best enjoyed fresh, but you can prep components ahead for quick assembly.
