Ingredients
  

  • 1 lb large shrimp, peeled and deveined
  • 3 tbsp butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups cooked rice
  • 1/4 cup fresh herbs (parsley, basil, or cilantro), chopped
  • 1 cup cherry tomatoes, halved
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions
 

  • Cook rice according to package directions, then stir in fresh herbs. Keep warm.
  • Heat olive oil in a skillet over medium-high heat. Season shrimp with salt and pepper. Sear 2–3 minutes per side until pink and slightly golden. Remove from skillet.
  • In the same skillet, melt butter and sauté garlic until fragrant. Stir in heavy cream and Parmesan cheese. Simmer until sauce slightly thickens.
  • Return shrimp to the skillet and toss in the garlic butter sauce.
  • Assemble bowls with rice at the base, shrimp on top, and cherry tomatoes on the side. Garnish with extra herbs.

Notes

For extra richness, add a splash of white wine when cooking the garlic before adding the cream. Use fresh herbs for the best flavor, but dried herbs can work in a pinch.
