  • 2 large chicken breasts
  • 1 cup panko breadcrumbs
  • 1/2 cup freshly grated parmesan cheese
  • 3 cloves garlic, minced
  • 3 tablespoons butter
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions
 

  • Pound the chicken breasts to an even thickness. Season with salt and pepper.
  • Coat the chicken in flour, dip in beaten egg, then press into a panko-parmesan mixture.
  • Heat olive oil and 1 tablespoon butter in a skillet over medium-high heat. Cook chicken for 4–5 minutes per side until golden brown and cooked through.
  • Remove chicken and set aside. In the same skillet, melt 2 tablespoons butter and sauté garlic until fragrant.
  • Pour in heavy cream and stir in parmesan cheese. Cook until smooth and velvety.
  • Return chicken to skillet, spoon sauce over the top, and simmer for 1–2 minutes.
  • Garnish with chopped parsley before serving.
