Ingredients
  

  • 400 g chicken thighs or breasts, cubed
  • 3 tbsp chili oil
  • 4 cloves garlic, minced
  • 2 tsp Cajun seasoning
  • 1 cup heavy cream
  • 0.5 cup grated Parmesan cheese
  • 2 tbsp butter
  • 300 g fusilli or rotini pasta
  • 2 medium zucchinis, spiralized
  • 1 tbsp olive oil
  • 0.5 tsp salt
  • 2 tbsp chopped parsley

Instructions
 

  • Toss chicken with chili oil, garlic, and a pinch of salt. Rest 15 minutes, then sear until golden and slightly charred.
  • Melt butter, sauté garlic, add cream and Cajun seasoning. Simmer until thickened, then stir in Parmesan.
  • Boil pasta until al dente, drain, and toss in Alfredo sauce.
  • Toss zucchini with olive oil, salt, and Cajun seasoning. Char for 2–3 minutes.
  • Plate pasta, top with chicken bites, add zucchini, and garnish with parsley.
