  • 2 medium zucchinis, sliced into rounds
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh chives, chopped
  • 1 tablespoon fresh dill, chopped
  • 1 cup Greek yogurt (or sour cream)
  • 2 tablespoons lemon juice
  • 3 cups cooked rice or quinoa
  • Salt and black pepper to taste

Instructions
 

  • Pat the steaks dry and season generously with salt, pepper, and olive oil. Let rest for 20 minutes at room temperature.
  • Heat grill or skillet to high heat. Cook steaks 4–5 minutes per side until desired doneness. Rest for 5 minutes before slicing.
  • Toss zucchini slices with olive oil, salt, pepper, and garlic powder. Grill until tender and charred, 3–4 minutes per side.
  • In a small bowl, mix Greek yogurt, garlic, parsley, chives, dill, lemon juice, and a pinch of salt. Add water if needed to thin the sauce.
  • Assemble bowls with rice or quinoa, sliced steak, and zucchini. Drizzle with creamy herb sauce and serve.
