  • 1 pound ground beef
  • 5 medium Yukon Gold or Russet potatoes
  • 1 medium yellow onion, diced
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup whole milk
  • 2 cups shredded cheddar cheese
  • 1 tablespoon chopped parsley (optional)

Instructions
 

  • Preheat oven to 350°F. Grease a 9x13-inch baking dish.
  • In a skillet over medium heat, cook ground beef with diced onion. Add garlic powder, salt, and pepper. Cook until beef is browned and onions are soft. Drain grease.
  • Peel and thinly slice potatoes (about 1/8 inch thick).
  • In a bowl, whisk together cream of mushroom soup and milk until smooth. Stir in 1 cup of shredded cheddar cheese.
  • Layer half the sliced potatoes in the baking dish. Top with half the beef mixture, then half the soup mixture. Repeat layers.
  • Sprinkle remaining cheddar cheese on top. Cover with foil and bake for 45 minutes.
  • Uncover and bake for an additional 25 minutes, or until golden and bubbly.
  • Let cool for 10 minutes. Garnish with parsley if using and serve.

Notes

You can substitute cream of mushroom soup with cream of chicken or celery if desired. Also delicious with a dash of hot sauce or paprika.
