Ingredients
  

  • 450 g ground beef
  • 2 medium sweet potatoes, peeled and diced
  • 1 cup quinoa, uncooked
  • 2 cups kale or spinach
  • 1 small red onion, thinly sliced
  • 1/2 cup pomegranate seeds
  • 1/2 cup Greek yogurt
  • 1 tbsp lemon juice
  • 1 tbsp olive oil (plus extra for roasting)
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp cumin
  • to taste salt and black pepper

Instructions
 

  • Preheat oven to 400°F (200°C). Toss sweet potato cubes with olive oil, salt, pepper, and smoked paprika. Roast for 25–30 minutes until golden.
  • Rinse quinoa and cook according to package instructions (1 part quinoa to 2 parts water). Set aside.
  • In a skillet, cook ground beef over medium heat until browned. Season with garlic powder, cumin, paprika, salt, and pepper. Drain excess fat.
  • Prepare greens: massage kale with olive oil to soften or keep spinach fresh. Slice red onion thinly.
  • In a small bowl, whisk Greek yogurt, lemon juice, olive oil, salt, and garlic powder for the sauce.
  • Assemble bowls: layer quinoa, roasted sweet potatoes, beef, greens, and onions. Top with yogurt sauce and pomegranate seeds.

Notes

Keep yogurt sauce separate until serving if prepping ahead to maintain freshness. Add avocado, chickpeas, or roasted veggies for even more flavor and nutrients.
