Ingredients
  

Main Ingredients

  • 1.5 lbs boneless skinless chicken thighs
  • 1/4 cup honey
  • 2 tbsp adobo sauce (from chipotles in adobo)
  • 1 chipotle pepper in adobo finely chopped
  • 1 tbsp olive oil
  • 1 tbsp lime juice
  • 2 cloves garlic minced
  • 1/2 tsp ground cumin
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste

For the Bowls

  • 3 cups cooked white rice
  • 1 avocado sliced
  • 1/2 cup cherry tomatoes halved
  • 1/2 cup cucumber diced
  • 1/2 cup shredded carrots
  • 1/2 cup shredded purple cabbage
  • 2 green onions thinly sliced

Instructions
 

  • Whisk honey, adobo sauce, chipotle pepper, olive oil, lime juice, garlic, cumin, paprika, salt and pepper in a bowl.
  • Add chicken and marinade to a bag or bowl. Marinate 30 minutes or overnight.
  • Cook chicken in a skillet or grill pan over medium-high heat, 6–7 minutes per side. Let rest, then slice.
  • Assemble bowls with rice, chicken, avocado, tomatoes, cucumber, carrots, cabbage, and green onions.
  • Drizzle with extra sauce and serve immediately.
