Main Ingredients
- 1.5 lbs boneless skinless chicken thighs
- 1/4 cup honey
- 2 tbsp adobo sauce (from chipotles in adobo)
- 1 chipotle pepper in adobo finely chopped
- 1 tbsp olive oil
- 1 tbsp lime juice
- 2 cloves garlic minced
- 1/2 tsp ground cumin
- 1/2 tsp smoked paprika
- Salt and pepper to taste
For the Bowls
- 3 cups cooked white rice
- 1 avocado sliced
- 1/2 cup cherry tomatoes halved
- 1/2 cup cucumber diced
- 1/2 cup shredded carrots
- 1/2 cup shredded purple cabbage
- 2 green onions thinly sliced
Whisk honey, adobo sauce, chipotle pepper, olive oil, lime juice, garlic, cumin, paprika, salt and pepper in a bowl.
Add chicken and marinade to a bag or bowl. Marinate 30 minutes or overnight.
Cook chicken in a skillet or grill pan over medium-high heat, 6–7 minutes per side. Let rest, then slice.
Assemble bowls with rice, chicken, avocado, tomatoes, cucumber, carrots, cabbage, and green onions.
Drizzle with extra sauce and serve immediately.
