  • 1 lb chicken thighs or breasts cut into bites
  • 1/2 cup cornstarch
  • 1/2 cup all-purpose flour
  • 3 cloves garlic minced
  • 1/2 cup honey
  • 2 tablespoons hot sauce
  • 1/2 teaspoon red chili flakes
  • 2 tablespoons butter for glaze
  • 8 oz rotini pasta
  • 1 tablespoon Cajun seasoning for pasta
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese grated
  • 2 cups broccoli florets
  • 1 tablespoon olive oil
  • 1 teaspoon Cajun seasoning for broccoli
  • 1 tablespoon butter for Alfredo
  • salt to taste
  • fresh parsley or basil for garnish

Instructions
 

  • Cut chicken into bite-sized pieces and toss with cornstarch and flour.
  • Heat oil in a skillet and fry chicken until crispy and golden. Set aside.
  • In a pan, melt butter, sauté garlic, add honey, hot sauce, and chili flakes. Simmer until thickened and coat fried chicken in the glaze.
  • Cook rotini pasta according to package directions. Drain and reserve some pasta water.
  • In a skillet, melt butter, add Cajun seasoning, stir in cream, then Parmesan until smooth. Toss pasta in sauce.
  • Toss broccoli with olive oil and Cajun seasoning. Roast or pan-sear until crispy.
  • Assemble pasta, top with broccoli and glazed chicken. Garnish with herbs.

Notes

For extra crispiness, fry the chicken in batches and don’t overcrowd the pan.
