  • 2 chicken cutlets
  • 1 cup panko breadcrumbs
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 cup olive oil
  • 2 balls burrata cheese
  • 1 cup cherry tomatoes halved
  • 1/4 cup fresh basil leaves torn
  • 2 tablespoons balsamic glaze

Instructions
 

  • Pound chicken cutlets to even thickness and season with salt, pepper, and garlic powder.
  • Prepare a dredging station with flour, beaten eggs, and breadcrumbs.
  • Coat each cutlet in flour, then egg, then breadcrumbs.
  • Heat olive oil in a skillet and fry cutlets until golden, 3–4 minutes per side.
  • Mix cherry tomatoes with a pinch of salt and torn basil.
  • Top each fried cutlet with burrata, spoon over the tomato mixture.
  • Drizzle with balsamic glaze, garnish with basil, and serve immediately.

Notes

For extra crunch, double bread the chicken. For added zing, mix a bit of lemon zest with the tomatoes.
