  • 2 large chicken breasts
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 eggs
  • 3 tablespoons olive oil
  • 4 ounces fresh mozzarella
  • 1 cup cherry tomatoes, halved
  • 1/4 cup basil pesto
  • 1/4 cup fresh basil leaves
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions
 

  • Pound the chicken breasts to an even thickness and season with salt and black pepper.
  • Beat the eggs in a shallow dish. Combine panko breadcrumbs and Parmesan in another dish.
  • Dip the chicken into eggs, then coat in the breadcrumb mixture.
  • Heat olive oil in a skillet over medium heat and cook chicken 4-5 minutes per side until golden and cooked through.
  • Top each chicken breast with mozzarella slices and let melt.
  • Spoon basil pesto over the melted cheese, add cherry tomatoes, and garnish with fresh basil leaves. Serve hot.

Notes

For extra flavor, roast the cherry tomatoes before adding them on top.
