  • 4 large egg yolks
  • 2 large eggs
  • 1 cup granulated sugar
  • 2/3 cup fresh lemon juice about 4-5 lemons
  • 1 tablespoon lemon zest freshly grated
  • 6 tablespoons unsalted butter cut into pieces

Instructions
 

  • Separate the eggs and gather all your ingredients. Zest and juice the lemons, avoiding the white pith.
  • In a heatproof bowl, whisk egg yolks, eggs, and sugar. Add lemon juice and zest.
  • Place the bowl over simmering water and stir constantly until thickened (10-12 min).
  • Remove from heat and whisk in butter until melted and silky.
  • Strain through a fine mesh sieve into a jar. Let cool, then refrigerate at least 1 hour before use.

Notes

For extra depth, you can stir in 1 tsp of limoncello after cooking. Store refrigerated and use within 10 days.
