Instructions
Separate the eggs and gather all your ingredients. Zest and juice the lemons, avoiding the white pith.
In a heatproof bowl, whisk egg yolks, eggs, and sugar. Add lemon juice and zest.
Place the bowl over simmering water and stir constantly until thickened (10-12 min).
Remove from heat and whisk in butter until melted and silky.
Strain through a fine mesh sieve into a jar. Let cool, then refrigerate at least 1 hour before use.
Notes
For extra depth, you can stir in 1 tsp of limoncello after cooking. Store refrigerated and use within 10 days.
