  • 2 chicken breasts
  • 1 lemon, zested and juiced
  • 2 tablespoons fresh dill, chopped
  • 1/2 cup grated Parmesan cheese
  • 1 cup heavy cream
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 8 ounces pappardelle or fettuccine pasta
  • 1/2 cup roasted red peppers
  • 1/3 cup feta cheese
  • 1 medium zucchini, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon Italian herbs
  • salt and pepper to taste

Instructions
 

  • Sear the chicken in olive oil until golden and cooked through.
  • Prepare Alfredo sauce with butter, garlic, cream, Parmesan, lemon zest, and dill.
  • Cook pasta until al dente and toss in Alfredo sauce.
  • Blend roasted red peppers and feta until smooth.
  • Roast Parmesan-coated zucchini until crispy.
  • Assemble and serve with chicken over pasta, feta, and zucchini on the side.

Notes

Marinate chicken in lemon juice for 30 minutes for extra flavor. Add pasta water if Alfredo gets too thick.
