Ingredients
  

  • 4 large eggs separated
  • 80 g sugar 40 g for yolks, 40 g for whites
  • 60 ml milk
  • 40 g unsalted butter melted
  • 1 teaspoon vanilla extract
  • 60 g cake flour
  • 1 pinch salt

Instructions
 

  • Grease and line an 8-inch cake pan with parchment paper.
  • Whisk yolks with 40 g sugar, milk, vanilla, and melted butter until smooth.
  • Sift cake flour and salt, whisk gently into yolk mixture.
  • Beat egg whites with 40 g sugar until stiff peaks form.
  • Fold whites into yolk mixture in three additions.
  • Bake in a water bath at 300°F (150°C) for 45–50 minutes.
  • Turn off oven, crack door slightly for 10 minutes, cool completely before unmolding.

Notes

Serve slightly chilled or at room temperature. Store in an airtight container in the fridge for up to 3 days.
