  • 2 large cucumbers
  • 3 medium tomatoes
  • 1 medium red onion
  • 0.5 cup vinegar (apple cider, red wine, or white)
  • 3 tablespoons olive oil
  • 1 tablespoon sugar or honey
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh dill or parsley, chopped

Instructions
 

  • Wash cucumbers, tomatoes, and onion thoroughly. Slice cucumbers into thin rounds, tomatoes into wedges, and onion into thin rings.
  • In a bowl, whisk together vinegar, olive oil, sugar or honey, salt, and pepper until well combined.
  • Place vegetables into a large mixing bowl and pour marinade over them. Toss gently to coat.
  • Add chopped dill or parsley and mix lightly.
  • Cover the bowl and refrigerate for at least 1 hour before serving to allow flavors to meld. Serve chilled.

Notes

For extra crunch, use seedless cucumbers or English cucumbers. Let the salad marinate overnight for deeper, more developed flavors.
