  • 2 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup unsalted butter, softened
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 boxes instant pistachio pudding mix (3.4 oz each), divided
  • 1/4 cup milk
  • 2 cups powdered sugar
  • 1/2 cup chopped pistachios, for garnish

Instructions
 

  • Preheat oven to 350°F (175°C). Line a 9x13-inch baking pan with parchment paper.
  • Cream softened butter with granulated sugar until light and fluffy.
  • Beat in eggs, one at a time, followed by vanilla extract.
  • Whisk flour and 1 box of pistachio pudding mix in another bowl, then mix into wet ingredients until combined.
  • Spread dough into pan and bake 20-25 minutes or until edges are golden. Cool completely.
  • Whisk remaining pistachio pudding mix, milk, and powdered sugar until smooth.
  • Frost cooled bars and sprinkle with chopped pistachios.

Notes

For extra flavor, toast the pistachios before garnishing. Freeze unfrosted bars for up to 2 months.
