  • 1 sheet puff pastry thawed
  • 4 oz cream cheese softened
  • 2 tablespoons powdered sugar
  • 0.5 teaspoon vanilla extract
  • 24 fresh raspberries
  • 1 egg beaten, for egg wash
  • 2 oz white chocolate melted, optional for drizzling

Instructions
 

  • Preheat oven to 375°F (190°C). Lightly grease a mini muffin tin.
  • Roll out the puff pastry on a floured surface and cut into 24 small squares. Press each square into the mini muffin cups.
  • In a bowl, mix cream cheese, powdered sugar, and vanilla extract until smooth.
  • Spoon a small amount of cream cheese mixture into each pastry cup and top with one raspberry.
  • Brush the exposed pastry edges with the beaten egg.
  • Bake for 15–18 minutes, until golden and puffed.
  • Cool slightly. Dust with powdered sugar and drizzle with melted white chocolate if desired.

Notes

Try swapping raspberries for blueberries or diced strawberries. White chocolate drizzle adds extra flair but is totally optional.
