  • 1 lb smoked sausage sliced into rounds
  • 2 medium sweet potatoes peeled and cubed
  • 2 tbsp olive oil
  • 3 tbsp honey
  • 2 tbsp soy sauce or tamari
  • 3 cloves garlic minced
  • 1 tbsp apple cider vinegar
  • fresh parsley chopped, optional
  • salt and pepper to taste

Instructions
 

  • Preheat oven to 400°F (200°C). Toss cubed sweet potatoes with 1 tbsp olive oil, salt, and pepper. Roast 25-30 minutes.
  • In a skillet over medium heat, sear sliced sausage in 1 tbsp olive oil for 3-4 minutes per side until browned.
  • Whisk together honey, soy sauce, garlic, and apple cider vinegar in a bowl.
  • Pour sauce into skillet with sausage. Simmer 2-3 minutes to thicken slightly.
  • Add roasted sweet potatoes to skillet. Toss everything gently to coat in sauce. Garnish with parsley.
