Ingredients
- 1 lb smoked sausage sliced into rounds
- 2 medium sweet potatoes peeled and cubed
- 2 tbsp olive oil
- 3 tbsp honey
- 2 tbsp soy sauce or tamari
- 3 cloves garlic minced
- 1 tbsp apple cider vinegar
- fresh parsley chopped, optional
- salt and pepper to taste
Preheat oven to 400°F (200°C). Toss cubed sweet potatoes with 1 tbsp olive oil, salt, and pepper. Roast 25-30 minutes.
In a skillet over medium heat, sear sliced sausage in 1 tbsp olive oil for 3-4 minutes per side until browned.
Whisk together honey, soy sauce, garlic, and apple cider vinegar in a bowl.
Pour sauce into skillet with sausage. Simmer 2-3 minutes to thicken slightly.
Add roasted sweet potatoes to skillet. Toss everything gently to coat in sauce. Garnish with parsley.
